Homemade coffee creamer

One of the moms at the last AHG lock-in brought some homemade vanilla coffee creamer with her which I neglected to try that night. But many of the moms did and their ooohs and aaahs made it very tempting!

Today I ran out of coffee creamer and needed some. So I thought I'd try making it as per her instructions. This would do in a pinch if you keep sweetened condensed milk on hand. Since it's so sugar-heavy I might try making my own from evaporated milk and xylitol. You definitely get a sugar rush with this stuff!

I stored mine in my Good Seasons salad dressing bottle. Just the right size for this!



Homemade Vanilla Coffee Creamer

1 can sweetened condensed milk
1 tsp. vanilla
Milk to thin (or cream if you prefer) (about 1/4 - 1/2 cup or so)

Blend the sweetened condensed milk and the vanilla. Add milk or cream, stirring as you go, until it reaches the desired thinness. Refrigerate in a covered, pourable container. Enjoy!

And if you wanted to get really wild and crazy, you could make your own sweetened condensed milk. :>) I'm super interested in xylitol, haven't done much with it yet, but I appreciate it that Goosie's vitamins are sweetened with it.

I noticed on the Downton Abbey episode we watched last night (Season 2: Episode 1) that Thomas offered condensed milk and sugar to Matthew while they were in the trenches at war. A rare treat in that situation, it seemed. Interesting.
