Chia "Tapioca" Pudding: Weird, but good

Ever since my attempt at doing a raw food diet I've had a bag of chia seeds sitting in my freezer that I've not really done anything with. I know that chia seeds are good as a thickening agent because they turn gelatinous when soaked. But I didn't know they are also a good source of omega 3 fatty acids. I was doing a little raw food googling after, well, it's a long, convoluted story I'll just skip. Anyway, I ran across a recipe for chia pudding that intrigued me. So I took the recipe and gave it a little twist. It kind of looks like tapioca pudding, doesn't it? It tastes very much like it, only it's not cooked!

Here's how I made mine:



Chia "Tapioca" Pudding

2 cups unsweetened vanilla almond milk
2/3 cup chia seeds
3 TBLS coconut palm sugar
1-2 tsp vanilla extract
Pinch of salt

Stir chia seeds into almond milk. Let sit for 10-15 minutes. Add sugar, vanilla and salt. Whisk together. At this point it will be setting up, but still not done. Leave alone for an hour or so (refrigerate if you want) and stir occasionally until it's good and thick. Eat and enjoy!

Next time I think I'll add some pureed strawberries!

lol Thanks! Poor chia. Always associated with chia pets, forever and ever, amen.

Robert loved this, as I expected he would. He added a little more sweetener, though, but agreed wholeheartedly that it tasted like tapioca pudding.

tapioca pudding gives me the shivers. :) I guess I think it's looking at me or something...
